Labneh - rich, slightly salted cream cheese

A fresh and tangy cream cheese made from raw, organic yoghurt, which is salted and hung in cheese cloths to drain.

This is an ancient tradition in the Middle-Eastern. If you know Georgian brynza cheese, it's like that but in a creamier form!

A royal partner to our beetroot cured salmon and Borodinsky bread.

Made by Kappacasein Dairy in central London in small batches using their own starter culture in a traditional 600L copper vat that was brought over from France.

The yoghurt is made from raw organic, cow's milk that they collect from Bore Place in Chiddingstone, Kent. The milk is collected during the morning milking, and processed, still warm from the cow, within 2 hours of collection. Minimal interventions (limited refrigeration, pasteurisation, and starter cultures) and maximum utilisation of the milk's nutrition.
