Khachapuri - *the* cheese bread from 'Little Georgia'
Our Imerulian khachapuri is made by Tiko from 'Little Georgia' - the trailblazer of Georgian food in London, who is our dear friend. Her restaurant is closed at the moment, so this is a rare opportunity to enjoy her food - delivered to your door!
Whenever anyone thinks of Georgia, they think of these unbelievably delicious, cheesy bread.
For a very good reason.
The dough is made with yoghurt or kefir, without any yeast, making it ever so light. The traditional suluguni cheese, impossible to find in London, is replaced with a mix of feta and mozzarella - genius.
* Put the bread in the oven for 5-7 mins and have alongside some cold aubergine Badrijani and slightly tart Spinach phali. With a glass of Kinzmarauli, of course:)
The bread is 28 cms in diameter. Easily 8 portions.
